Taste of Stockholm


A couple of weeks ago my parents, James and I went to a food festival called Taste of Stockholm, it was a fabulous day! It's an event were really good restaurants and food producers can show their products and you can buy small versions of the restaurants' famous dishes. We had been to Taste of London before so when me and my mum won tickets to this one in a competition we naturally had to check it out!

The festival was at Riddarholmen in Stockholm, it's beautiful there and the weather was perfect.


This was one of the courses I tried from a restaurant called Sjömagasinet, lobster salad with pistachio, mmmm!


We met lots of Swedish celebrity chefs, my mum who follows all the programs on tv was in heaven! One of them was Jonas Lundgren, he was really nice and the food from his restaurant was superb, here's his lamb and smoked salmon dishes.




Mum even signed up to participate in a cooking class...

There was also some lovely food products in the market area, even though we thought it could have been a bit bigger with more stalls. I guess it will expand since this was the festival's first year.

Before we went home we got some rosé champagne at a bargain price (there was nobody at this stall so they put down the prices a lot), a perfect way to end a really fun day!

Insalata Tricolore & Pan Fried Seabass With Butter Sauce


It's Friday!
Here's my most delicious dinner tip to start off your weekend:

Insalata Tricolore & Pan Fried Seabass With Brown Butter Sauce

Ingredients (serves two):
  • 2 seabass fillets
  • breadcrumbs -or- matzo meal -or- flour 
  • 1 large tomato
  • 1 avocado
  • some basil
  • 1/4 of a red onion
  • 1 packet of buffalo mozzarella cheese
  • a few capers
  • 100 g butter
  • lemon juice
  • salt/pepper
Cut the tomato, avocado and mozzarella in thick slices, arrange them with the basil leaves in this order: tomato, basil, mozzarella, avocado. Or arrange in whichever order you want, just don't put all the tomato slices or mozzarella next to each other ok? Cut up the onion finely and sprinkle some of it on top of your tricolore salad. Season with a little pepper and sea salt, if you want you can also add a dash of olive oil or vinaigrette dressing.

Pat the fish fillets (on both sides) in breadcrumbs, matzo meal or flour, season with salt and pepper. Put some oil in a hot pan and fry the fish until they are golden brown, approximately 1-2 minutes on each side. When ready remove the fish from the pan and wrap them in foil to keep warm. Carefully wipe the pan with a paper towel.

For the sauce you need to be focused because it'll be done in a flash! Pop the butter in the pan and lower the heat slightly, at the same time chuck in the onion. Splash some lemon juice in there together with a bunch of capers. Stir in some salt and pepper and you're done! The butter sauce should be light brown but obviously not burned.

Unwrap your seabass and cover them with the butter sauce, and enjoy!

The Best Cheesecake in the World


Please excuse this totally bragalicious post but I just had to tell you about this cheesecake I made the other day, it was bloody amazing.
It may look quite simple but it was just phenomenal, perfect creamy yet light texture, lovely flavour with a hint of vanilla and fresh lemon... I could go on but instead I'm just gonna say if you love cheese cake (like me) you have to give it a go! Find the recipe here.

PS. I left it in the oven for 15 mins longer than it said in the recipe (on the initial bake on 200 degrees).
PPS. I didn't use a table top mixer, I just mixed all the ingredients with an electrical whisk and that worked absolutely fine.

My 2012 in Pics


Hello everyone and Happy New Year! I hope 2013 has started off well for you all.
I am very excited about what this new year will bring but a little bit sad to see 2012 go, it was an incredible year and definitely the best year of my life so far!
